"Chef Bernards Granola"
Yogurt, Strawberries, Blackberries

serves six

Granola

1 cups rolled oats

1/2 cup wheat germ

1/4 cup coarsely chopped macadamia nuts

1/4 cup coarsely chopped pecans

1/4 cup sliced almonds

1/4 cup chopped sun dried apricots

1/4 cup chopped sun dried cherries

1/4 cup chopped sun dried mango

2 Tbsp. shelled pepitas

1/3 cup grapeseed oil

2 tsp. pure vanilla extract

1 tsp. almond extract

1/2 tsp. lemon grass powder

1/4 tsp. ground cardamom

1/4 tsp. ground star anise

1/4 cup shredded unsweetened coconut

Pre-heat oven to 225°F. Combine grains, nuts, fruit, and seeds in large mixing bowl. Add remaining ingredients except coconut. Rub mixture between your palms to thoroughly coat. Spread mixture evenly on large baking sheets. Bake 1 1/2 hours, until golden. Stir occasionally. Remove from oven. Cool to room temperature. Toss with coconut.

Presentation

3 cups plain whole milk yogurt

1 pint strawberries, washed, dried, stemmed, hulled, quartered

1 pint blackberries, washed, dried

6 sprigs mint

Divide yogurt among six chilled footed bowls. Top with portion of granola. Garnish with strawberries, blackberries, and mint sprig.
