“Affiorato”, which means “what comes to surface”, is an old traditional technique of making extra virgin olive oil that resorts to the simplest physical laws, oil being lighter in weight than water. It consists of waiting that the oil comes to the surface separating from water out of the liquid generated by cold crushed olives left in specific containers. The “floating” oil is then collected by hand with special jugs. The result is a particularly fresh and delicate olive oil.
