According to great Italian chefs, vincotto is an elixir, sweet, velvety vinegar, with the subtle overtones of spices, grapes and figs. The Calogiuri family has produced vincotto since 1825 using a closely guarded traditional recipe. This recipe is now available commercially through the dedicated effort of Gianni Calogiuri, the latest generation of the Calogiuri family. Full bodied, sweet and sour. Vicotto is aged for four years before being bottled and sold the world over. Mere drops enhance roasted meats, carpaccio, grilled fresh water fish, soups and minestrone, parmigiano regiano, sorbets, fruit salad and many desserts.
